Healthy Recipe: Baked Olive Oil Chicken

Making healthy lunch!

Boneless, skinless chicken thighs
Various veggies (Carrots, celery, tomatoes)
Olive oil

1. Cut up veggies and put on bottom glass pan. Put chicken on top. Preheat 425 oven.

2. Cover with olive oil, add 1/4 cup water.

3. Foil cover and bake for 45 mins or until juices running.

Status: yummy!
